I know I sound like a broken record but it's possible the performance rollers are letting you down. They may have flat spotted and aren't opening the variator all the way. Besides, a quarter of a gram between the 6 and 5 3/4 gram rollers shouldn't affect acceleration that much. You might get more top end with a very slight loss of take off.
